Raise your hand if your a mother of a child who LOVES popsicles– so much that you might give in and give him more than a few a day?  I’M SO GUILTY OF THIS.   I’ve been really into checking labels and ingredients lately wondering what the freak I’m eating.  I just want to know exactly what is what, and why can’t I even read the damn word?  Well, that is a whole other subject I’ll get into later, but for now, I just wanted to point out that most popsicle have a ton of BS in them that I don’t like.  Added sugars, food dyes, artificial flavorings etc…

I didn’t like the idea of Oaks eating the 3-4 (half eaten I might add) popsicles a day, that are full of junk.  My sister in law gave me the idea that she makes her own.  No clue why I never thought of this!  But I looked up popsicles molds on amazon, made my own mixture that sounded delicious and BAM, Oaks loves them so much!  They’re super easy to make.  Here is the recipe!

Makes about 7 popsicles, but my POPSICLE MOLD only had room for 6.

  • 1/2 can of Coconut Milk 
  • 1 cup Cold Pressed Real Orange Juice
  • 1 Banana
  • 3 Large Pineapple Chunks
  • Handful of Spinach
  • BLEND IT UP!

You’ll pour the mix into each mold.  It comes with a funnel, so you don’t spill everywhere.  Stick in the freezer for at least 6 hours, but it’s best if you let them sit overnight.  

Then pull them out & enjoy!  Just FYI it’s a little hard to pull the popsicle out of the mold, so just know that it might take you a couple tries to get it out, but totally normal.

 Best way to sneak in veggies!  Hope your kiddos love them as much as mine!  Let me know if you guys try them & comment below to tell me what you think!

EGG WHITE & SPINACH CAKES

Recently, I started making these SUPER easy peasy Egg White & Spinach cakes to eat as a snack everyday.  I make them on Sunday, so I have them so the week.  

This makes it SO easy to just grab and go, and you’re getting your veggies and protein in.   They’re high in protein.  You can also add any veggies you want really.

All you need is Egg Whites, Coconut Oil, Spinach, Cupcake pan and your choice of toppings.  I used Avocado, and Sir Kensington Ketchup, which I prefer because of its natural ingredients.  Scroll down for recipe.

Step 1:  Start your oven and set it at 375.  Meanwhile, Grease your pan with some coconut oil.  Make sure you grease the entire cup so it doesn’t stick.

Step 2:  Take a tiny handful of spinach, and tear it up into each cup.  I use about 3 leaves per cup.  It would be yummy to add peppers, kale, green onions, or even some mozzarella cheese (which has less fat)

Step 3: Pour in egg whites, filling each cup to the top.  I get these cartons from Costco.

After filling, put it in the oven for 15-20 minutes.

Step 4:  When done, carefully remove each egg white cake from the pan onto a plate.  

Grab an Avocado, and slice onto two cakes.  You can use whatever toppings you prefer.  

Next, pour some Sir Kensington Ketchup on and enjoy!  It is so easy and extremely healthy!

I have 2 cakes a day, so I meal prep Sunday and make enough for 6 days, so 12 cakes.  Meal prepping is SO important in eating healthy and often.  

What happens (at least to me) when I don’t meal prep, I start to get really hungry and grab the first thing I see, and often overeat.    You go into starvation mode.

So MEAL PREP and snack often so you don’t ever go into starvation mode.  It is so good to eat at least every 2-3 hours.  Something nice and satisfying.

Also, when we get to busy, which most of us are!  We tend to forget about our health and grab whatever we can.  Thats why meal prepping is so important.  When you prep your meals, you have it all there, so you can just grab it and eat it and not even think about what you’re going to eat, because it’s all right there in front of you!

You hold yourself more accountable too.  You want to eat healthy when you put in all that effort!  It is a good motivator to be good and eat good!   And not to mention, it is the best way to start your week!   Especially if you’re gone 8-10 hours everyday.  

I am home most the time, and still meal prep, because I find it so much easier to make healthier choices throughout my day.

It takes a good hour every Sunday for me to prep it all.  And honestly, it has been so beyond worth it!
