AVOCADO MAYO TUNA CAKE

I’m always looking to switch up my meals, but I want them to be super quick, but also give me a good balance between fats, protein and carbs.  I try to go around 20-30 protein, 10-15 fat, and 20-30 carbs every meal.  I just recently added in this amazing Avocado Mayo with Lime from Better Body Foods, SO GOOD.    You guys have to try this little snack!   They have their avocado mayo in chipotle too, which is very tasty. 

WHAT YOU NEED.

DIRECTIONS
Mix Avocado Mayo, celery, relish and tuna all together.  Place on top of toast, or rice cake.  I love it on either!  Also is great with GG crackers, or rice crackers.

You can also prep this for the week!  I like to make it for the next 3 lunches.  It stays fresh if you store it in the fridge.  I don’t like going longer than 3 days though.   That way you always have a great protein snack.  You can throw it on some bread for a sandwich, eat it plain, or have it for a snack with crackers.  It’s so easy!  The Avocado Mayo is what makes you so delicious.

HOW DO I BAKE MY VEGGIES?  

SO VERY SIMPLE GUYS, I USE AVOCADO OIL FROM BETTER BODY FOODS!

WHY AVOCADO OIL?  

Along with coconut oil, avocado oil is one of the best possible oils to have your kitchen for cooking with.

the refined oil has a very high smoke point, usually listed as between 480 Fahrenheit and 520 Fahrenheit . This makes it a great choice for stir-frys and other high-temperature cooking.

Olive oil’s smoke point, by comparison, can vary greatly depending on the grade of the olive oil and its processing. Low quality ‘light’ olive oil is generally cited at a highest smoke point of around 430 Fahrenheit , which may be ok for medium frying.

However, extra virgin olive oil, the type we’re told is the healthiest and best to get, can have a smoke point as low as 220 Fahrenheit which is definitely not suitable for high temperature cooking or pretty much any kind of frying.

So I’ve turned to cooking with avocado oil lately, instead of my regular olive oil.  This has definitely made the taste much better, to me!   These two vegetables are so simple, but can be paired with just about any meal.  I like to meal prep these at the beginning of the week, to toss in salads, bowls, top the onions on your meat etc.   Here is what I do.  It’s so very simple!  

  1. Set oven at 425.  Peel 3 large sweet potatoes and dice up.  Then cut red onion into large chunks.  
  2. Place in a large bowl and pour in about 1-2 tbsp Better Body Foods Avocado Oil.  Then add Mrs Dash Seasoning in.  Mix around using your hands, or spoon, whatever is best for you!
  3.  Place all veggies on baking sheet and set in oven for 15-20 minutes.
