HOW DO I BAKE MY VEGGIES?

SO VERY SIMPLE GUYS, I USE AVOCADO OIL FROM BETTER BODY FOODS!

WHY AVOCADO OIL?

Along with coconut oil, avocado oil is one of the best possible oils to have your kitchen for cooking with.

the refined oil has a very high smoke point, usually listed as between 480 Fahrenheit and 520 Fahrenheit . This makes it a great choice for stir-frys and other high-temperature cooking.

Olive oil’s smoke point, by comparison, can vary greatly depending on the grade of the olive oil and its processing. Low quality ‘light’ olive oil is generally cited at a highest smoke point of around 430 Fahrenheit , which may be ok for medium frying.

However, extra virgin olive oil, the type we’re told is the healthiest and best to get, can have a smoke point as low as 220 Fahrenheit which is definitely not suitable for high temperature cooking or pretty much any kind of frying.

So I’ve turned to cooking with avocado oil lately, instead of my regular olive oil.  This has definitely made the taste much better, to me!   These two vegetables are so simple, but can be paired with just about any meal.  I like to meal prep these at the beginning of the week, to toss in salads, bowls, top the onions on your meat etc.   Here is what I do.  It’s so very simple!

  1. Set oven at 425.  Peel 3 large sweet potatoes and dice up.  Then cut red onion into large chunks.
  2. Place in a large bowl and pour in about 1-2 tbsp Better Body Foods Avocado Oil.  Then add Mrs Dash Seasoning in.  Mix around using your hands, or spoon, whatever is best for you!
  3.  Place all veggies on baking sheet and set in oven for 15-20 minutes.

Have you checked out Better Body Foods yet?  I’ve been using all their organic products and I’m loving them because they have just about everything that I need to cook.  I made these Superfood Bars with a lot of their ingredients.  Just order online and they’re sent straight to you.  Kinda perfect!  To name a few, I use their chia seeds, Pbfit, Avocado oil, coconut oil, cacao powder etc.

CHOCOLATE PROTEIN CAKES

Processed with VSCO with c2 preset

Processed with VSCO with c2 preset

I was testing out a way I could make something delicious and with chocolate, so these protein cakes are simply amazing!  You will be so surprised how good they’re and most importantly you will feel guilt free.   They are packed with protein.

So just look at it this way, you are basically making your own clean protein bar from home.  No added sugars!

Makes 3.

1/2 cup Almond Flour

1 cup Almond Milk

1 tbsp Cocoa Powder

1 scoop Chocolate Protein Powder

2 drops Coconut Stevia

1 Ounce Dark Chocolate Discs

3 Cupcake Cups

Coconut oil spray or Light Olive Oil Spray

Optional: 1 Tbsp Coconut shreds

  • Mix all ingredients together.  If you need to add more almond milk for consistency, then you can.  Should be creamy.
  • Spray each cup with oil, then pour mix into each cup evenly.  Place in freezer for a couple minutes.
  • Meanwhile, melt the chocolate in microwave or stove top until creamy.
  • Take the protein cakes out, and pour 1/2 tbsp onto each protein cake. (Optional: sprinkle coconut shreds on each cake)
  • Place the cakes back into the freezer for 10-15 mins.

They should be a little hard, if you want to eat them like a bar of chocolate, then peel back the cup and enjoy!

If you want to eat them a little softer, place in the fridge for a 3-5 minutes before eating.  Will be slightly sticky, so you can eat with a fork if you would like.

SO good!
