I don’t know about you guys, but I get sick of always wanting something sweet at night!  It makes it so hard sometimes to stay on track.  So I’ve been reading a lot about high fat diets and healthy fats and how they can really help curb your appetite and make you more satisfied.

So I created something SO delicious with Better Body Foods products.  This is totally sugar free and sweetened with Monk Fruit.  I put them in these little glass containers to store in my fridge, so you can honestly put it in whatever you’d like.  It makes about 6 servings.   What we’ve been doing is eating it with raspberries and whipped cream.  It REALLY helps the sugar cravings at night.  Totally feel completely satisfied after eating it.  You can add it to whatever you’d like, or just eat a few bites plain whenever you feel you need it!  

I’m going to be eating this a lot for sure when I’m trying to lose this baby weight! 

WHAT YOU NEED.

DIRECTIONS

  • In a saucepan add in coconut milk, and monk fruit, then bring to medium heat and stir.  Let that simmer a couple mins.
  • In a medium bowl whisk together the egg yolks. Then reduce to medium heat and mix in xantham gum.
  • Then slowly whisk in the egg yolks into the coconut milk mixture.
  • Add in the cacao powder slowly whisking in and cook until it thickens. About 3-4 minutes.
  • Remove from heat and stir in coconut oil and vanilla extract. 
  • Then pour into dessert cups, jars, whatever you want to store it in.  Then let it sit for 2-3 hours in the fridge before eating.
  • Once ready to eat, mix in some nuts, fruit and whipped cream!  I use about 3 tbsp of the mix, add in berries and top with whipped cream for a late night treat!  I’m telling you its THE BEST way to curb the appetite and make you feel satisfied!  Even Oaksies LOVES it. So kid approved there!

So I’m all about baking with this Super Food Blend and finding yummy recipes that we can eat on the go that are super healthy for us.  I made these cute SUPERFOOD BLOSSOM MUFFINS for a little spring inspo.  I honestly made them with this CLOVER MOLD, but they came out looking more like blossoms and actually a lot cuter than a clove.  I cut them down the middle and put kerrygold grass fed butter, or PBFIT or almond butter.  They’re SOOO delicious.  I have been eating them for breakfast too if I feel too lazy to make anything.  I just want something quick most of the time, so these have been so nice and there is NO guilt with them.  You’ll feel good making this choice!  Oaks and I ate a whole batch in a day which is about 10 muffins, so double up!

SUPERFOOD BLOSSOM MUFFINS

Makes 10 muffins

WHAT YOU NEED.

  • 2.5 Bananas
  • 1/4 cups almond milk (or milk of your preference)
  • 3 tbsp Better Body Foods Agave
  • 1 egg
  • 1 tbsp melted butter
  • 1 cup organic rolled oats
  • 1/2 superfood blend
  • 1 cup whole wheat flour
  • 2 tbsp baking powder
  • Clover Mold baking sheet

INSTRUCTIONS

  1. Preheat the oven to 375.  Blend bananas and almond milk until there are no banana chunks.
  2. Pour mixture in a large bowl , add in egg, agave, and melted butter.  Mix together until smooth. 
  3. Add in all the dry ingredients, rolled oats, superfood blend, flour and baking soda and mix until smooth.
  4. Grease your muffin cups and spoon in each cup until full. 
  5. Bake for 15 minutes.

Baking Molds are legit the best to bake with because they’re easy to clean and don’t stick to the pan.  I had to throw away most of my muffin pans because they would always stick even with me greasing them up!

This doughnut mold would be super awesome to do them with because you could trick your kids into thinking they’re doughnuts!
