CHOCOLATE CHIP PUMPKIN TRUFFLES

Get ready to just love life and eat 10 of these everyday, because guess what? They are only 31 calories a ball…. YEP, thats right.  Of course I was going to figure out a way for a little pumpkin treat everyday that has the right amount of goodness and macros.  Tis the season!  Try these babies and let me know how you like them.  

What you need…

  1. 3 Tbsp Enjoy Life Mini Chocolate Chips These are dairy, nut and soy free.
  2. 15 oz Can Organic Pumpkin Pure
  3. 1 Scoop Plant Based Vanilla Protein (I like this one)
  4. 1-1/2 Cups Quick Rolled Oats 
  5. 3 Drops Vanilla Cream Sweet Drops
  6. 3 Tsp Brown Sugar
  7. 2 Tsp Organic Pumpkin Spice 
  1. Mix Oats, protein powder, and pumpkin puree and thoroughly mix together.  Add in Brown sugar, sweet drops and chocolate chips. OR you can add the chocolate chips to each ball after they’re rolled out.
  2. Roll each ball and place in a plastic container to store in the fridge.  It’s nice to pre-make these for the week and have them all week to grab and go!  This mix should make 30 balls.  Each ball should be bite size. 

Have fun with them though!  I sometimes put a couple on top of my halo top at night. So good!

CHOCOLATE PROTEIN TRUFFLES

You guys are going to love these if you LOVE chocolate, but also want to stay on track.   These have saved me from eating bad at night!  Give them a try.  It is the perfect snack to “indulge” in.

Makes 11

4 Tbsp Coconut Flour

2 Scoops Johns Killer Cacao Protein

1 Tbsp Cocoa Powder

1 Tbsp Coconut Shreds

3-5 Drops Coconut Stevia

6 Tbsp Vanilla Almond Milk

15 Ghirardelli Dark Chocolate Melting Wafers

1. Mix all ingredients together, besides the dark chocolate

2. Once mixed, take a spoon to grab a little mixture at a time, and roll in a ball with both hands.  Each ball should be about 1/2 inch.  This makes 11, but it depends on how big you want yours. Once done, set aside.

3.  Take all 15 chocolate wafers and melt in a bowl in the microwave for about 1-1/2 minutes.

4. Once melted side aside.  

5. (optional) Grab another bowl and pour about 1-1/2 tbsp coconut shreds for the topping.

6.  take each ball and roll in the chocolate, then to the coconut shreds.

7. Once done, put all protein truffles in the fridge and let cool for about 5 minutes before enjoying!

I like to make double the batch as a meal prep and just have them on hand!  It really is so nice to have and you get your protein in for the day!
